Speckle Park is a remarkable breed of cattle with ancient genes. The resilience of the ancestry enables them to thrive in a wide variety of conditions, contributing to the meat marbling incredibly well on pure grass as well as on minimal grain.

Because we’re committed to a nose-to-tail no waste approach, all parts of the animal are utilised. This means that not only primary and secondary cuts are used, but organ meats, trim and even the distinctive hides of this unique breed all have something to offer.

HOPE LONDON DRY GIN

The soft and smooth finish is of exacting quality and can be served neat or with a mixer. This juniper-forward gin is infused using a combination of maceration and vapour infusion.
The flavour profile has a uniquely South African twist – lemon pelargonium adds bright lemon notes and rosemary gives it a rounded herbaceousness.
NOSE Juniper, citrus and coriander.
PALATE Classic citrus and juniper, with some rootier elements emerging.
FINISH A mellow, floral finish.

These include hand-picked organic kapokbos, otherwise known as snowbush, and buchu from our unique floral kingdom.
Kapokbos is a wild sweet rosemary, which adds floral and herbaceous notes, and buchu is a small fragrant shrub that lends uniquely punchy blackcurrant notes.
This is South Africa in a glass!
NOSE Punchy fruit notes with hints of pine.
PALATE Floral with blackcurrant and juniper.
FINISH Complex finish which is subtly sweet.
HOPE MEDITERRANEAN GIN
HEADY WITH EVOCATIVE MEDITERRANEAN FLAVOURS.
THIS CONTEMPORARY GIN IS SAVOURY AND UNUSUAL.
INFUSED WITH 12 BOTANICALS.
The most complex of the Hope Distillery gins, it is distilled from Western Cape grape spirit and then infused with twelve botanicals, including olives, cardamom and fresh herbs.
Balanced and compelling, Hope Mediterranean Gin pairs well with food and adds an extra dimension to classic cocktails.
NOSE A savoury, olive nose with hints of orange peel.
PALATE Complex with layerings of olives and herbs.
FINISH Lingering savoury complexity with fresh basil.

A DELICATE BALANCE OF POT-STILLED AND RECTIFIED SPIRIT.
Handcrafted in small batches, only the pure heart of the distillation run is bottled, to ensure that it is smooth enough to be sipped on ice.
Hope Small Batch Vodka is also perfect in cocktails.
NOSE Clean yet slightly fruity.
PALATE Crisp and clean with hints of citrus fruit.
FINISH Smooth, mellow finish.
HOPE ESPERANZA AGAVE
DESIGNED TO BE SIPPED, A FLORAL, SMOOTH AGAVE.
After a long fermentation period on site, followed by slow, gentle distillation, we then rest our agave spirit in a stainless steel tank for 30 days to allow the flavours to settle.
Designed to be sipped, this is a floral, smooth agave spirit. Alternatively, try it in a “TnT” (or “tequila and tonic”) made by mixing our Esperanza with tonic and a slice of lime.
Please note that because of an international denomination of origin, no-one outside of Mexico can make an agave spirit and call it tequila.
NOSE Butterscotch with floral notes.
PALATE Rich caramel with some spice.
FINISH Warm and soft vanilla finish.

We decided to go against the grain – literally. Using the finest South Australian Grapes.
This gives Vodka+ a distinctive taste profile that will enhance any vodka mixer.
A vodka is only as good as its water source, so we headed to the southernmost tip of the continent, close to the Antarctic, where the Roaring Forties drive the cleanest air into the region and the skies downpour pure clear rainwater.
A water so pure it simply had to be captured!
